Wine Review: This straw-colored Champagne from Forget-Brimont displays tiny streaming bubbles. It opens with a bread dough and green apple bouquet with a hint of lemon peel, crushed stone, and honey. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is round, bright and crisp. The flavor profile is a crushed gravel and moist bread dough blend with notes green apple, honey, and chamomile tea. We also detected some hints of almond, tart lemon and chalky minerality. The finish is dry, and this sparkler lingers and lasts for a while. The Tasting Panel would pair Champagne with trout almondine or with sweet sausage and sage stuffed mushroom. Enjoy – KWGTP
