Wine Review: This slightly opaque and dark ruby colored Cabernet Sauvignon from Force Majeure opens with an inviting black currant bouquet with hints of boysenberry, cedar and bacon. On the palate, this wine is full bodied, slightly acidic and juicy. The flavor profile is a mineral influenced black currant and oak blend with notes of black olive, blackberry and menthol. The finish is dry and its dusty tannins are chewy and stick around for quite a while. This Cab is a full throttle offering right now and needs time. If you want to try some now, be sure to decant it for a while and it nicely settles down with air. The Panel suggested pairing it with a well-marbled ribeye steak or braised short ribs. Enjoy – KWGTP
