Wine Review: This deep garnet colored Cabernet Sauvignon opens with a black currant and black licorice bouquet with hints of mushroom and earthy forest floor. On the palate, this wine is medium bodied with plus acidity. The mouthfeel is bright, round, and rich. The flavor profile is tart stewed plum and black currant blend with notes of cedar and black cherry. We also detected some hints of mushrooms, stony minerality and Baker’s chocolate mixed it. The finish is dry and is moderate tannins are nicely extended. The Tasting Panel would pair this Cab with osso buco or with Forge & Vine's short ribs. Enjoy – KWGTP
Winemaker Notes: Upon opening, aromas of black currant and sweet licorice are present with notes of vanilla spice. Flavors of black cherry and dark plum fill the mouth with well-balanced acidity and a lingering slightly sweet finish. The long French oak aging regimen gives this wine a strong structure with ample aging potential.
