Wine Review: This dark ruby colored Cabernet Sauvignon from Ferrari-Carano opens with a black currant and black raspberry bouquet with hints of Dr. Pepper. On the palate, this wine is medium bodied, balanced and juicy. The flavor profile is a stewed plum and black raspberry blend with notes of cocoa and tart cherry. I also detected hints of red licorice. The finish is dry and its gentle mild tannins drift away nicely. This Cab would pair well with an instant pot short rib ragu with gnocchi. Enjoy - Ken
Winemaker Notes: Vibrant aromas of plum, cedar, cola, cocoa, sandalwood spice and leather awaken the senses, while full-bodied flavors of black cherry, licorice and cedar generously fill the palate. Round tannins and notes of vanilla with toasty caramel add to the lingering, elegant mouthfeel. Our Cabernet Sauvignon pairs well with roasted red meats such as lamb and beef. It also pairs well with medium and strong-flavored cheeses, such as blue cheese or sharp cheddar.
