Wine Review: This slightly cloudy and dark ruby colored Cabernet Sauvignon from Ferrari Carano opens with a fragrant red currant bouquet with a hint of craisin. On the palate, this wine is medium bodied, balanced and smooth. The flavor profile is a gentle plum with notes of mild oak and fine minerality. I also detected a hint of craisins as well. The finish is dry and its well-managed mild dusty tannins build up and linger for a while. I would drink this Cab in the near term and pair it with a New York strip steak. Enjoy – Ken
Winemaker Notes: This full‐bodied wine entices with captivating aromas of cedar, cardamom, black currant and olive. Lush and full flavors of black cherry, rich plum, vanilla and leather are layered with a solid structure of rich tannins. Our "Reserve" Cabernet Sauvignon pairs well with roasted, broiled or barbecued game and red meats such as lamb and beef, as well as pork and veal. Medium and strong‐flavored cheeses, such as blue cheese or sharp cheddar, also pair nicely with this wine.
