Wine Review: The longer this wine was open, the better it scored. On day two it was certainly better than right after opening it. It is pale yellow colored and opens with a fragrant yellow grapefruit bouquet with a hint of lime and wet stone. On the palate, this wine is light bodied, initially very crisp and acidic. However, the acidity level does settle down quite a bit with some aeration and time. The flavor profile is a mineral infused mild lime with hints of peach pit, pineapple, and mild yellow grapefruit. Eventually it rounds out and some softness shows up along with some cantaloupe and creamy vanilla flavors as well. The finish is dry and its acidity lingers for a little while after it's gone. I would pair it with linguine with a clam and garlic broth or rolled prosciutto and cantaloupe. Enjoy – Ken
Winemaker Notes: Ferrari-Carano's 2011 Fume Blanc has aromas of lime, kiwi, citrus, melon and a touch of grass complemented by flavors of grapefruit, lemon and lime with a mango and guava finish. Cool, stainless steel tank fermentation gives this wine a crisp freshness while the subtle oak character from barrel aging adds complexity and depth.
