Wine Review: This dark ruby Cab opens with a black cherry bouquet with hints of smoky oak and eucalyptus. On the palate, this wine is medium bodied, balanced, and soft. The flavor profile is a very tasty mild blackberry and gentle oak blend with some notes of black cherry mixed in as well. The finish is dry and its moderate tannins are sticky and linger quite a while. A few panelists thought this was a blend and they were right considering the 25% of Syrah and Petite Verdot that is included. We would suggest drinking this wine soon with a thick cut of prime rib or steak tips with a sesame ginger marinade. Enjoy - KWGTP
Winemaker Notes: The fruit for our 2007 Ferrari Carano Cabernet Sauvignon comes primarily from mountain grown fruit in Alexander Valley. With aromas of blackberry jam, baking spices, pure maple syrup and black tea, this wine delights with rich delicious flavors of caramel, espresso and dark chocolate. A juicy and full mid-palate, rich, mouth-coating tannins and excellent depth characterize this lovely Cabernet Sauvignon.
