Wine Review: This opaque and dark ruby colored Cabernet Sauvignon from Faust is very good and was very well-received. It opens with a mild cedar and cassis bouquet. On the palate, this wine is medium + bodied, balanced and smooth. The flavor profile is a mild black raspberry with notes of cedar and black olive. I also detected a hint of black plum and cassis. On the finish, its moderate tannins and fruit are nicely prolonged. This Cab would pair well with a veal chop. Enjoy - Ken
Winemaker Notes: The 2015 Faust Cabernet is a blend of our estate vineyards in Coombsville and Rutherford and mountain sourcing in Atlas Peak, Mount Veeder and Howell Mountain. Dark juicy fruit combine with nuanced spice notes and balanced acidity make this wine perfect for steaks or meaty comfort food and is enjoyable on its own.
