Wine Review: This very dark ruby colored Cabernet Sauvignon from Etude opens with a very fragrant black currant and tobacco bouquet with hints of mild oak, blackberry, and violets. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is balanced, smooth, lush, and polished. The flavor profile is a black currant and oak blend with notes of stone dust and black raspberry. We also detected hints of black tea, pecan, and black cherry. The finish is dry, and its flavors and moderate polished tannins are nicely sustained. The Tasting Panel would pair this Cab with a New York strip steak or with roast beef with Yorkshire pudding.
