Wine Review: This pitch black colored Cabernet Sauvignon from Estate 1856 is very good. It opens with a black olive and black currant bouquet. On the palate, this wine is full bodied, balanced and smooth. The flavor profile is a gentle blackberry and espresso blend with notes of mild minerality, black currant and oak. The finish is rather dry and its solid tannins build up and stick around for a while. I would decant this Cab and then serve it with a rib roast. Enjoy - Ken
