Wine Review: This ruby colored organic Cabernet is very good. It opens with a bouquet that is earthy with aromas of lead shavings, cedar and black cherry bouquet. On the palate, this wine is medium bodied, fruit forward, and balanced. The flavor profile is a ripe black cherry with notes of red currant with a touch of cranberry and oak. The finish is dry and its moderate tannins are a touch tingly and gentle and show nice length. The panel suggested that this good value Cabernet from Chile would pair well with veal or beef stew. Winemaker Notes: Deep ruby-red. The complex nose features notes of fresh cherries with a soft touch of chocolate. This is a wine with tremendous volume, concentration, and silky, friendly tannins that result in a well-balanced wine with a long and fruity finish. An excellent wine with dishes based on meats and stews, such as slow-cooked short plate and grilled blood sausage. Also it pairs well with pasta such as gnocchi especially prepared with blue cheese.
