Wine Review: This garnet-colored Pinot Noir from Elk Cove opens with a red plum and rose petal bouquet with a hint of slate. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is nicely balanced, smooth, and silky. The flavor profile is a mild cherry and herbal tea blend with notes of dusty minerality. and red plum. We also detected a hint of vanilla in the aftertaste. The finish is dry, and its polished tannins are nicely sustained. We would pair this very good Oregon Pinot with beef carpaccio. Winemaker Notes: This wine opens with sweet black plum and dark cherry fruit, its confectionary quality tempered by black tea, nutmeg, and chicory. Generously structured with a pleasant lift, it finishes with notes of black licorice and vanilla.
