Wine Review: This dark ruby colored Pinot Noir from Dutton Goldfield opens with a mild plum and faint boysenberry bouquet. On the palate, this wine is medium bodied, balanced and smooth. The flavor profile is a tasty mild red raspberry with hints of faint oak and mild boysenberry. The finish is dry and it’s flavors linger nicely. This Pinot is very food friendly and elegant. It would pair well with fresh sliced Norwegian salmon or seared tuna. Enjoy – Ken
Winemaker Notes: The long, friendly 2012 ripening season brings out opulent fruit combined with focused elegance in our Fox Den Vineyard. The wine leads with aromas of black raspberry, strawberry, violets and cedar, with a hint of earth. As it sits in the glass, the berry notes become more apparent in the nose, along with cinnamon spice and a particular impression of silkiness. The raspberry and strawberry of the nose is carried forward in the mouth, and you’re struck by the fineness and richness of the wine, along with the vibrancy of fruit. Subtle herbal notes of sage peek out, along with a spicy lift that entices on the finish. Along with the classic salmon and mushroom dishes pinots always pair so well with, the delicate beauty of the wine makes it perfect with simple fowl dishes like rosemary roasted chicken or quail.
