Wine Review: This slightly cloudy and deep ruby colored Cabernet Sauvignon from Dry Creek Vineyard opens with a red currant and cedar bouquet with hints of rose petals, tomato leaf, and pomegranate. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is round, smooth, and zesty. The flavor profile is a blackberry and cedar blend with notes of black licorice and cassis. We also detected some hints of black tea, black pepper, and a touch of menthol. The finish is rather dry and its dusty and grippy tannins stick around for quite some time. We would decant this youthful Cabernet for a while before pairing it with a marinated grilled hanger steak. Winemaker Notes: The Dry Creek Valley is an undiscovered gem, producing some of the finest Cabernet Sauvignon in California. This lush and elegant Cabernet Sauvignon initially displays aromas of plum, blackberry and cranberry, followed by bay leaf, sage and white pepper. A first taste of the full-bodied wine reveals flavors of black currant and black cherry. Hints of herbes de Provence, mocha, and fine leather bolster its richness, while firm tannins provide structure. The plush palate and well-rounded mouthfeel make this Cabernet approachable in its youth while also perfect for aging.
