Wine Review: This opaque and very dark ruby colored Cabernet Sauvignon from Dry Creek opens with a strawberry and craisin like bouquet with a hint of oak. On the palate, this wine is medium bodied, a little juicy and savory. The flavor profile is a mild mineral infused black plum with notes of oak, black currant and black cherry. The finish is dry and its moderate dusty tannins are nicely prolonged. This Cab would pair well with a pan-fried skirt steak with shallot butter. Enjoy – Ken
Winemaker Notes: This impeccable Cabernet Sauvignon displays lively aromatics of black cherry, black currant and plum. Additional airing reveals nuances of leather and toasted almonds. The palate is full-bodied and rich with elegant flavors of black raspberries and cocoa powder. The wine is fruit-forward and youthful, with moderate tannins and a finish of white pepper. This Cabernet is very characteristic of a Dry Creek Valley Bordeaux. It offers intensity and richness and reflects the terroir beautifully.
