Wine Review: This pale-yellow sparkler opens up with a bouquet of Granny Smith apples, hints of honeysuckle, and lemon tart. The palate is light and inviting with small bubbles that don't hang around too long. The palate is rich with green and yellow apples, hints of caramel or custard and touches of orange marmalade. This sparkling wine is bone dry with rather rounded acidity. Paired with a white fish this sparkler will sing. - Nicolay
Winemaker Notes: Young and alive, the aromas jump out of the glass expressing baked red apple, ginger, lemon curd, wild flowers, apricot and biscuit notes. Bright lemon-driven acidity and very fine mousse leaves a creamy mouthfeel and a very long finish.
