Wine Review: This dark ruby colored Cabernet Sauvignon from the Finger Lakes opens with a fragrant black cherry bouquet with a hint of oak and blackberry. On the palate, this wine is medium bodied and pleasantly acidic. The flavor profile is a tasty mild blackberry and oak blend with hints of blueberry. The finish is dry and its acidity and tannins linger and last for quite some time. This Cabernet would pair well with pork tenderloin. Enjoy - Ken
Winemaker Notes: Medium intensity with dominant characters of blackcurrant and sour cherry, supported by green beans, black pepper, sage, and subtle fennel notes. The balance between acidity, velvety tannins, chalkiness, flavour intensity and structured palate reveal its aging potential. Food Pairing: Slow roasted game meats with fresh herbs and wild mushrooms.
