Wine Review: This black ink colored Cabernet Sauvignon opens with a ripe earthy plum and oak bouquet with notes of blackberry and cherry. The full-bodied palate is smooth, bold, and dry with integrated tannins and acidity. The flavor profile is a slightly tart black cherry, black raspberry, graphite, oak and blueberry with notes of light clove, fig, and dried herbs. The sticky tannins linger before fading away nicely on the finish. I would recommend pairing this Horse Heaven Hills Cabernet Sauvignon with a pot roast. – Joe
Winemaker Notes: Characteristic of the appellation and the 2017 vintage, this Cabernet Sauvignon offers aromas of rich blackberry, pie crust and baking vanilla. The wine enters the palate with a silky raspberry profile accented by light notes of confectioners’ sugar. Hints of peach and raspberry take you into the finish, lingering with the juicy acidity that is characteristic of Horse Heaven Hills.
