Wine Review: This ink colored Cabernet Sauvignon from Horse Heaven Hills opens with an earthy stewed plum, blackberry and cedar bouquet. I also detected some coffee notes. On the palate, this wine is full bodied, smooth, juicy, and bold. The flavor profile is a blend of plum, blackberry, blueberry with notes of tobacco, vanilla and some herbs. The finish is initially chewy with grippy tannins that eventually fades away nicely. I would recommend pairing this Washington State Cabernet Sauvignon with a grilled ribeye. – Joe
Winemaker Notes: This Cabernet embodies an enticing array of ripe red fruit, intermixed with notes of graham cracker, allspice and dried tobacco. The addition of Syrah lends a full and rich texture on the mid-palate, further accented by bright acidity from the Petit Verdot, sweet red fruit from the Merlot and luscious raspberry notes supplied by the Malbec. The soft and supple mouthfeel is supported by sweet oak tannins and fresh fruit character, finishing with a juicy acidity that is characteristic of Horse Heaven Hills.
