Wine Review: This dark ruby colored Cabernet Sauvignon based wine from Domaine de Chevalier opens with a black currant and cedar bouquet with hints of stony minerality and cured meat. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is balanced and round. The flavor profile is cassis and cedar blend with notes of black cherry and stone dust. I also detected some hints of green tea. The finish is dry, and its flavors, acidity, and moderate tannins drift away nicely. I would pair this red blend with a filet mignon. Enjoy - Ken
