Wine Review: This pale coral colored Sparkling Rosé from Domaine Carneros displays a few streams of very tiny bubbles. It opens with a rose petal and wet stone bouquet with hints of grenadine and Sprite. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round, and easy drinking. The flavor profile is lemon tea and orange zest blend with notes of crushed stone and ginger. We also detected hints of bread dough and red cherry. The finish is dry, and its flavors and acidity are very refreshing. The Tasting Panel would pair Brut Rosé with chocolate mousse or ceviche. Winemaker Notes: The wine's aroma, delivered on a delicate mousse, hints of strawberry, tangerine, orange blossom, marmalade, and potpourri. The palate displays peach, apricot, watermelon, and a touch of underlining honey for a soft, delicate mouthfeel and a smooth, long finish. Despite its color, it is a true Brut – as dry as our other wines. Exceedingly food-friendly, pairs well with salmon, and fresh berries.
