Wine Review: This dark red colored Cabernet Sauvignon from Diamond Creek is Excellent! It opens with a cassis and black cherry bouquet. On the palate, this wine is medium to full bodied, balanced and super smooth. The flavor profile is a tasty cassis and minerality blend with notes of mild oak. I also detected hints of blueberry and green olive. The finish is dry and its well-managed tannins drift away so nicely. This Cab would be a perfect pairing with a filet mignon. Enjoy - Ken
