Wine Review: This very dark ruby colored Cabernet Sauvignon from Davis Estates opens with a black currant and red plum bouquet hints of mint and faint strawberry. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is nicely balanced, smooth, and polished. The flavor profile is black currant and crushed stone blend with notes of mocha and gentle blueberry. We also detected some hints of black olive, cedar, and black tea mixed in. The finish is dry, and its well-managed prominent dusty tannins are nicely sustained. The Tasting Panel would decant this Rutherford Cab to settle its tannins. Then we would pair it with a well-marbled ribeye steak. Enjoy – KWGTP
