Wine Review: This very dark ruby colored Cabernet Sauvignon from Davis Estates opens with black raspberry, dark chocolate, and pencil lead bouquet with hints of gentle spearmint, red plum, and oak. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is nicely balanced, very smooth, polished, and velvety. The flavor profile is a tasty black currant and mocha blend with notes of oolong tea and red raspberry. We also detected some hints of elegant loam, graphite, and espresso. The finish is dry, and its well-managed moderate tannins are nicely sustained. The Tasting Panel would pair this Cab with a grilled hanger steak or steak Florentine. Enjoy – KWGTP
