Wine Review: This dark ruby colored Pinot Noir from Davis Bynum opens with a maple syrup and raspberry bouquet with r. hints of stewed plum, cinnamon, and cedar. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round and savory. The flavor profile is black plum tea and loam blend with notes of mushroom, clove, and black cherry. I also detected some hints of teaberry, black pepper, and cedar. The finish is dry and its moderate tannins, flavors, and acidity stick around for quite some time. This wine benefits from a little aeration. I would decant it before serving it with Toulouse-style cassoulet. Enjoy – Ken
Winemaker Notes: This wine opens with a hint of minerality before notes of ripe strawberry and cherry fruit fill your senses. Toasted marshmallow, baking spice and creamy tones follow in a nod to the choice of oak barrels. The rich mouth is balanced with acidity underpinning flavors of cherry, spice and savory notes. The finish is elegant, showing classic flavors of cherry compote and toasted oak through the end.
