Wine Review: This opaque and dark ruby colored Cabernet Sauvignon from DAOU is excellent! It opens with an inviting black raspberry and graphite bouquet with hints of leather, red licorice, and forest floor. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is nicely balanced, very smooth, seamless, sophisticated, and rich. The flavor profile is a blackberry and graphite blend with notes of cassis and toasted oak. We also detected hints of blueberry, tobacco, and black licorice. The finish is dry, and its flavors, acidity, well-managed polished tannins build-up and stick around for quite some time. The Tasting Panel would decant this Cab for a bit before pairing it with a porterhouse steak at your favorite steak house. Enjoy - KWGTP
Winemaker Notes: Soul of a Lion is the crown jewel of DAOU and an emblem of our quest to produce unsurpassed Cabernet Sauvignon from the terroir of DAOU Mountain. The 2022 presents deep red and purple hues in the glass. The nose is elegantly layered with notes of violet, strawberry jam, cassis, blueberry, and black currant. Generous flavors of red fruit, chocolate-covered blueberry, and baking spices expand into a rich, rounded mouthfeel, while vivid acidity and bright tannins join together on an exquisitely structured finish. The result is a wine of immense staying power that will evolve favorably for many years to come.
