Wine Review: This dark ruby colored “Estate” Cabernet Sauvignon from DAOU opens with a black currant and black cherry bouquet with hints of clove, leather, and violets. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is balanced, very smooth, and lush. The flavor profile is ripe blackberry and stewed black plum blend with notes of anise, stone dust, and clove. We also detected hints of tobacco, mocha, and toasted oak. The finish is dry, and its flavors, acidity, and dusty tannins linger and last for a very long time. The Tasting Panel would pair this Cab with a New York strip steak. Enjoy - KWGTP
Winemaker Notes: The 2022 Cabernet Sauvignon is made predominantly from the finest vineyard blocks on DAOU Mountain and aged extensively in hand-selected, custom-crafted French oak barrels. In the glass, deep red-purple hues reveal the richness to come. The nose offers an abundance of blackberry jam, blueberry, cherry, blackberry, rose petal, eucalyptus, and licorice with delectable undercurrents of vanilla, coffee, and chocolate. Lavish blackberry fruit flavors expand with notes of mocha, baking spice, cigar box and pine. Rounded tannins and mouthwatering acidity converge on a beautifully textured finish.
