Wine Review: This opaque and midnight purple colored Cabernet Sauvignon from DAOU opens with a black currant and black cherry bouquet with hints of au jus, blueberry, cola, and oak. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is very well-balanced, super smooth, polished, lush, and layered. The flavor profile is black currant and graphite blend with notes of toasty oak and blueberry. We also detected some hints of dark chocolate covered cherries, cola, and black licorice. The finish is dry and its well-managed refined tannins build-up and last for a very long time. The Tasting Panel would pair this Cab with Roy's rib roast and friends. Enjoy - KWGTP
