Wine Review: This dark mulberry colored Cabernet Sauvignon from DAOU opens with a black currant and black cherry bouquet with hints of graphite, blueberry, and tobacco. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, smooth, and voluptuous. The flavor profile is chocolate and black cherry-cola blend with notes of blackberry. We also detected some hints of black tea, toasty oak, strawberry, and integrated stony minerality. The finish is dry, and its managed refined moderate tannins are nicely sustained. The Tasting Panel would decant this Cab for a while before enjoying it by the fireplace.
