Wine Review: Retrospective Tasting: This very dark ruby colored Cabernet Sauvignon from DAOU opens with a black raspberry and strawberry bouquet with hints of red plum and violets. On the palate, this wine is medium plus bodied with medium acidity. The mouthfeel is balanced, incredibly smooth and savory. The flavor profile is a extracted blackberry and cassis blend with notes of stony minerality, black tea and oak. We also detected hints of 70% dark chocolate and blueberry. The finish is dry and its big and chewy tannins build-up and last for a very long wine. The Tasting Panel would decant this Cab for a very long time before serving it with a New York strip steak. Original Review 1/15/23: This very dark ruby colored "Estate" Cabernet Sauvignon from DAOU opens with blackberry and Dr. Pepper bouquet with hints of blueberry and strawberry. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is nicely balanced, really smooth, and seamless. The flavor profile is a cassis, mild blackberry and stony minerality blend with notes of oak and blueberry. We also detected hints of black tea, cherry and 70% dark chocolate. The finish is dry, and its fine-grained tannins build-up linger for quite some time. The Tasting Panel would pair this Cab with a porterhouse steak or with short ribs. Enjoy - KWGTP (94.5)

Winemaker Notes: The 2020 vintage offers a highly perfumed nose of wild cherry, blackberry, and currant with notes of plum, persimmon, graphite, and cigar box, all underscored by a crushed limestone minerality. The palate is voluptuous and vibrant, presenting generous flavors of fresh blackberry, blueberry compote, kirsch, and cassis along with espresso, dark chocolate, vanilla, and hints of lavender potpourri. Firm, well rounded tannins provide unmatched structure and body, while an elegant, persistent finish lingers. An age-worthy Cabernet Sauvignon that will reward with careful cellaring.
