Wine Review: This opaque and deep dark ruby colored Clone 33 Cabernet Sauvignon from DAOU opens with a black olive and blackberry bouquet with hints of black tea and violets. On the palate, this wine is full bodied with integrated medium acidity. The mouthfeel is well-balanced, round, and smooth. The flavor profile is a blackberry, cedar and mochaccino blend with notes stewed plum and oak. We also detected hints of blueberry and strawberry. The finish is dry, and its moderate integrated tannins stick around for a very long time. The Tasting Panel would pair this Cab with a New York strip steak or braised short ribs. Enjoy – KWGTP
