Wine Review: This opaque and deep purple colored Cabernet Sauvignon opens with a spiced plum and black currant bouquet. along with some earth tones. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is refined, smooth, and silky. The flavor profile is a tasty black currant and blueberry blend with notes of oak. We also detected hints of juicy black plum, dried cherry, and dark chocolate. The finish is dry and its tingly acidity and refined tannins build-up and stick around for a while. The finish definitely adds to its character. The Panel would pair this Cab with a smoked brisket or with a porterhouse steak. Enjoy – KWGTP
Winemaker Notes: The 2019 DAOU Reserve Eye of the Falcon is a joyous marriage of two beloved Bordeaux varieties. (Cabernet Sauvignon and Petit Verdot) The nose offers vivid aromas of blackberry, cassis, Bing cherry and saddle leather. Subtle notes of mulberry, kirsch, pencil shavings and milk chocolate are accented by crushed dried flowers and a suggestion of mint. On the palate, a torrent of juicy, concentrated fruit flavors includes boysenberry, plum, black currant and blueberry, all graced by hints of sage, sandalwood. and black raspberry. The mouthfeel is layered, harmonious and firmly structured with a silky texture. Bright fruit ultimately yields to richer layers of exotic spice, cigar box and fennel, concluding with a long, elegant finish.
