Wine Review: Retrospective Tasting: This very dark purple colored Cabernet Sauvignon from DAOU opens with a cassis and blackberry bouquet with hints of blueberry, wintermint, and moist pipe tobacco. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is beautifully balanced, super smooth and seamless. The flavor profile is a very tasty black currant, graphite, and oak blend with notes of black plum and black tea. We also detected hints of dark chocolate. The finish is dry, and its polished tannins go on and on for a very long time. The Tasting Panel would decant this wine for very long time before serving it with a well-marbled ribeye. Enjoy – KWGTP

Original Review 1/23/22: This opaque and deep purple colored Cabernet Sauvignon opens with a black cherry and red currant bouquet with hints of tobacco leaf, vanilla and rose petal. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is smooth, velvety, and wow! The flavor profile is a concentrated blend of black raspberry and black currant with notes of oak and stony minerality. We also detected hints of spice and dried herbs. The finish is dry, and its dusty tannins are sticky and very extended. The Panel would just drink this delicious Cab on its own. Enjoy – KWGTP (96)

Full bodied and well-structured, this wine maintains its freshness and elegance into a long finish.
