Wine Review: Retrospective Tasting: This dark cherry colored Cabernet Sauvignon from DAOU opens with a strawberry licorice and black cherry bouquet with hints of cedar closet, wet stone, and red plum. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is balanced, smooth, bright, and fresh. The flavor profile is a red plum, stone dust minerality, and red licorice blend with notes of milk chocolate, black cherry, and cedar. The finish is dry and its dusty tannins build-up for quite some time. The Tasting Panel would pair this Cab with rack of lamb or a ribeye steak. Enjoy – KWGTP

Original Review 3/1/21: This deep ruby colored Cabernet Sauvignon opens with a black currant and black cherry bouquet with hints of oak and earthy minerals. On the palate, this wine is full bodied, balanced, smooth and juicy. The flavor profile is black cherry and blackberry blend with nicely integrated graphite and some stone dust notes. We also detected hints of black currant and toasted coconut mixed in. The finish is dry and its moderate tannins build-up and linger for a very long time. That said, the tannins did settle down after being open for a couple of days. So, in the near term, the Panel suggests decanting this impressive Cabernet Sauvignon and pairing it with a ribeye steak. Winemaker Notes: A deep, purple-black hue connotes lush aromas of black currant, crushed blackberry and dark chocolate with hints of licorice, violets and dried oregano. A focused, full-bodied palate boasts a powerful entry and concludes with a long, layered finish. Silky, integrated tannins provide beautiful structure, while an enchanting floral note adds freshness and precision. This wine is approachable now, but also has the grace and force to provide pleasure for decades to come.
