Wine Review: Retrospective Tasting: This slightly cloudy and dark ruby colored Cabernet Sauvignon from DAOU opens with a black cherry and red beet bouquet with hints of red licorice, vanilla, and cedar. On the palate, this wine is medium plus bodied with medium acidity. The mouthfeel is balanced. round and smooth. The flavor profile is a black cherry and cassis blend with notes of cedar, red plum, and cinnamon. We also detected hints of blueberry, milk chocolate, and menthol. The finish is dry and its moderate dusty tannins build-up and stick around for quite some time. The Tasting Panel would pair this Cab with lamb lollipops. Enjoy – KWGTP
Original Review 3/10/20: This midnight purple colored Cabernet Sauvignon from DAOU opens with a black currant bouquet with hints of smoke and green pepper. On the palate, this wine is full bodied, balanced and velvety. The flavor profile is a tasty mild black currant with notes of blackberry and black cherry. We also detected hints of vanilla-cola and coffee mixed in. The finish is dry and its flavors and moderate tannins are nicely prolonged. The Panel suggested pairing this Cab with a grilled leg of lamb or duck breast. Enjoy - KWGTP (91)
