Wine Review: Retrospective Tasting: This very dark ruby colored Cabernet Sauvignon from DAOU opens with a red plum, cedar, and cinnamon bouquet with some addition earth scents. On the palate, this wine is medium bodied with medium acidity. The mouthfeel is balanced, smooth, and gentle. The flavor profile is a cedar, juicy black plum, and green olive blend with notes of rhubarb and stony minerality. We also detected some hints of nutmeg mixed in. The finish is dry, and its dusty tannins are a bit austere. The Tasting Panel would pair this Cab with a pulled pork and red bean burrito. Enjoy – KWGTP
