Wine Review: This dark ruby colored Cab opens with a ripe black currant bouquet with a hint of oak. In the mouth, this wine is full bodied, well balanced, fruit forward and has a significant palate presence. The flavor profile is blackberry and licorice with notes of oak and dark chocolate on the back palate. This Cab has a great finish that is dry and its building tannins are sticky and linger for quite a while. The panel suggested pairing this gem with a ribeye steak. Enjoy - KWGTP
Winemaker Notes: The D.R. Stephens Cabernet Sauvignon from Moose Valley Vineyard shows the color, aroma and flavor intensity resulting from this very small harvest. A deep, rich garnet color, the aromas abound with the perfumed cedar and blackberry notes for which this vineyard is noted. Additionally, spice, vanilla, and sweet chocolate add dimension. Texturally the wine is full, lush, and very ripe, with heavy, melted-chocolate texture of heavy satin. This wine will continue to gain complexity and weight for the next 4 to 8 years.
