Wine Review: This pitch black colored Cabernet Franc from Oak Knoll opens with a black cherry and black raspberry bouquet with hint of smoky oak. On the palate, this wine is medium bodied, slightly acidic, rich and very juicy. The flavor profile is an oak infused black raspberry jam with notes of black plum. I also detected a hint black currant. The finish is dry and its flavors, a little heat, and it moderate tannins stick around for quite some time. This Cab Franc is a young wine that needs time. In the short term it improves with aeration, so decant it and serve it with a well-marbled ribeye. If you have patience, try it again in 5 years or more. Enjoy - Ken
