Wine Review: This pale straw-colored Chardonnay from Corley is built for oak lovers. It opens with a fragrant vanilla, oak and caramel apple bouquet with hints of coconut. On the palate, this wine is medium bodied, slightly acidic and mouthwatering. The flavor profile is a toasted coconut and oak blend with notes of caramel green apple and grilled pineapple. The finish is dry and its flavors drift away nicely. The Panel suggested pairing this Chard with Gibbet Hill Grill’s crispy potato-crusted cod served over a sweet corn and bacon chowder. Winemaker Notes: This wine has wonderful and expressive aromas of tropical fruits like mango, melon and fig. These are balanced with light citrus tones. There is a light creaminess and a hint of butterscotch from the French oak barrels and partial malolactic fermentation. On the palate the wine is rich, with a light beam of fresh acidity.
