Wine Review: This opaque and deep purple colored Cabernet Sauvignon from Corley is impressive. It opens with a pleasant black currant bouquet with hints of black cherry and blueberry and a touch of cedar. On the palate, this wine is full bodied, nicely balanced and rich. The flavor profile is a chocolate covered blueberry with notes of cedar. I also detected hints of cola and touch of clove. The finish is dry and its well-manage tannins build-up slightly and linger for quite some time. This Cab would pair nicely with Roy’s rib roast. Enjoy - Ken
Winemaker Notes: This wine is expressing rich aromas of rich, ripe, red berry fruit with undertones of sweet blond oak, light caramel, and mocha. On the palate, the wine is lush with a deep core of ripe fruit on the mid-palate. It is wonderfully balanced through to the finish, with richness in depth of body and also in character of tannins. Decant 30-60 minutes prior to serving. Drink now - 2037.
