Wine Review: 4/13/24 Review: This slightly cloudy and dark garnet colored Cabernet Sauvignon based blend from Continium opens with a black cherry and blueberry bouquet with hints of dark chocolate and cassis. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, smooth, and refined. The flavor profile is a black cherry and graphite blend with notes of gentle oak and mild plum. We also detected some hints of black pepper. The finish is dry and its flavors and moderate tannins are nicely extended. This Cabernet Sauvignon would still pair well with filet mignon. Enjoy – KWGTP

12/24/20 Review: This midnight purple colored second label Cabernet Sauvignon from Continuum opens with a black cherry, dark chocolate and slate bouquet. On the palate, this wine is medium bodied and balanced and savory. The flavor profile is a black currant and slate blend with notes of blueberry and black licorice. I also detected hints of black cherry and black pepper. The finish is dry and moderate tannins drift away nicely. Our mini-tasting group thought this Cab would pair well with a filet mignon. Winemaker Notes: 2018 Novicium is a study in authentic Cabernet Sauvignon expression from our Sage Mountain Vineyard with dark concentrated fruit, a sinewy structure on the mid palate, and hints of pepper, tapenade, star anise and granite. The promising once young blocks that were the foundation of Novicium are now maturing into their substance, showcasing the vibrant nature of the wines from this land and particularly of this vintage.
