Wine Review: This slightly opaque and very dark ruby colored Cabernet Sauvignon from Clos du Val opens with an appealing black currant and black cherry bouquet with hints of blueberry and chocolate. On the palate, this wine is full bodied, slightly acidic and a little viscous. The flavor profile is a very ripe red currant and plum blend with hints of cranberry and oak. I also detected hints of minerality and cedar in the background. The finish is dry and its fruit flavors linger nicely. This Cab would pair well with pork tenderloin with thyme and figs. Enjoy - Ken
Winemaker Notes: This wine delivers everything we are looking for from a great vintage. The color is an inky purple hue and the wine has aromas of coffee, blueberry, and toast. The palate is rich and complex, full of flavors of plum, boysenberry, and cocoa. The texture is lush, silky and full with well structured tannins that are approachable now or will cellar well for decades.
