Wine Review: This slightly cloudy and garnet colored Cabernet Sauvignon based wine from Chateau du Retout opens with a pencil lead and black currant bouquet with hints of oak. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round, mouthwatering, and savory. The flavor profile is a graphite and black cherry blend with notes of oak and oolong tea. We also detected hints of black currant. The finish is dry, and its flavors, acidity, and dusty moderate tannins are well-managed. The Tasting Panel would pair this Cab with a slow cooked beef brisket. Enjoy - KWGTP
