Wine Review: The coral colored Champagne displays several tiny streaming bubbles. It opens with a walnut and bread dough bouquet with a hint of strawberry. On the palate, this wine is light bodied, delicate and nicely balanced. The flavor profile is a nutty strawberry and mineral blend with notes green apple and a touch of lime. The finish is dry and its flavors drift away nicely. This Champagne would pair nicely with grilled bacon wrapped pheasant poppers. Enjoy – Ken
Winemaker Notes: To the Eye: A sophisticated powdery pink robe with luminous glints of wild rose. Delicate, vivacious bubbles are the result of an ageing period or 36 months.
To the Nose: The initial fragrances from this wine are redolent of home-made strawberry jam mixed with the fruitiness of blood peach. With hints of rich warm notes of gingerbread and cinnamon.
On the Palate: The deep powerful mouthfeel - the result of ageing in thousand-year old cellars - offers a burst of strawberry, raspberry and blackberry nestled in velvety whipped cream.
