Wine Review: This opaque wine is almost black in color. It opens with a mild black currant bouquet with hints of leather, eucalyptus, and black olive. On the palate, this wine is medium bodied, very well balanced, and suave. The flavor profile is a delicious gentle blackberry with a hint of plum. The finish is dry, shows some heat, and its moderate tannins are slightly prolonged. The panel suggested that this Cab would pair well with filet mignon. Enjoy – KWGTP
Winemaker Notes: The 2007 Pritchard Hill Cabernet Sauvignon is chock full of all the components that make us excited about drinking delicious wines. Deep, dark saturated colors seem to stain the glass. Floral notes of violets mingle with sweet blackberry, anise, and espresso aromas. Immediately the mouth is full with sweet berry and chocolate flavors that morph into a liqueur‐like veneer that coats the palate. The tannins are smooth and layered into the rich body of the wine. The wine has excellent structure and leaves a silky impression throughout the long finish.
