Wine Review: This midnight purple colored Cabernet Sauvignon from Caymus opens with a fragrant violet and black raspberry bouquet with hints of spearmint, sage, and black currant. On the palate, this wine is full bodied with medium acidity. The mouthfeel is balanced, round and dense. The flavor profile is espresso, black cherry, and black licorice blend with notes of oak, black raspberry, and nutmeg. We also detected hints of dark cocoa, stony minerality and molasses. The finish is dry, and its gritty tannins and flavors are quite extended. The Tasting Panel would pair this Cabernet Sauvignon with Capital Grill’s Kona crusted dry aged NY strip. Enjoy – KWGTP
