Wine Review: This pitch-black colored Cabernet Sauvignon from Caymus opens with a chocolate, macerated black cherry and blueberry bouquet with hints of cinnamon stick and oak. On the palate, this wine is full bodied with medium acidity. We also found it to be balanced, rich and concentrated. The flavor profile is a milk chocolate and black cherry compote blend with notes of coffee, vanilla and malt. We also detected a hint of nutmeg mixed in. The finish lingers and its flavors are nicely prolonged. The Panel would certainly drink this very good Cab on its own. With food, they would pair it with Strega’s Wagyu beef meatballs and some chocolate mousse. Enjoy – KWGTP
Winemaker Notes: Scarlet red color, nose of cassis and French oak - even before the first taste, an intense, rich, ripe, intriguing wine captures the imagination. The palate follows through with seamless and complex harmony - full, rich, exciting and ever-ruminating. A momentary evolution in the glass with fine and abundant tannins balanced by fruit-driven character. Soft and slightly gritty. Ripe yet structured. Expansive and long in finish.
