Wine Review: This very dark ruby colored Cabernet Sauvignon opens with a black cherry and black currant bouquet. On the palate, this wine is full bodied, balanced and fruit forward. The flavor profile is a tasty Bing cherry and mild black currant blend with notes of stewed plum. I also selected hints of oak, gentle minerality and black pepper. The finish is dry and its flavors and well-managed moderate tannins linger nicely. This is a food friendly Cab that would pair nicely with a filet mignon at your favorite steak restaurant. Enjoy - Ken
Winemaker Notes: Caymus has a signature style that is dark in color, with rich fruit and ripe, velvety tannins – as approachable in youth as in maturity. We farm Cabernet grapes in eight of Napa's 16 sub-appellations, with diversification enabling us to make the best possible wine in a given year. Our Cabernet offers layered, lush aromas and flavors, including cocoa, cassis and ripe dark berries.
