Wine Review: This opaque and dark ruby colored Cabernet Sauvignon from Caymus opens with a black cherry and vanilla oak bouquet. On the palate, this wine is full bodied, balanced and smooth. The flavor profile a ripe plum and blackberry blend with notes of black cherry. I also detected hints of blueberry and oak mixed in as well. The finish is dry and its flavors linger and last for a very long time. I would pair this very good Cab with a prime rib. Enjoy – Ken
Winemaker Notes: A rich, dense ruby color hints at the dark fruit nose of blackberry and currant that carries through to the palate, interwoven with complex aromas of black licorice, anise and creme de cassis. On the palate, the wine opens up to reveal an earthiness, with brown spice, cigar box and ripe dark fruits that linger throughout the extracted and long finish. The texture is opulent and rich, yet has a velvety quality with supple density. Rich, fine-grained tannins are balanced with ripe fruit, acidity and oak.
