Wine Review: This opaque and dark ruby colored Cabernet Sauvignon from Caymus is Excellent. It opens with a moderate black cherry and black current bouquet. On the palate, this wine is full bodied, well balanced, and smooth. The flavor profile is a tasty black cherry with notes of blueberry. I also detected mild oak and minerality nicely integrated into this wine. The finish is dry and its substantial tannins are present and noteworthy. This wine should be decanted for at least an hour if you are going to have it soon. It would pair perfectly it with a porterhouse steak. Enjoy - Ken
Winemaker Notes: A rich, dense ruby color, hints at the dark fruit nose of blackberry and currant that carries through to the palate, interwoven with complex aromas of black licorice, anise and creme de cassis. On the palate, the wine opens up to reveal an earthiness, with brown spice, cigar box and ripe dark fruits that linger throughout the extracted and long finish. The texture is opulent and rich, yet has a velvety quality with supple density. Rich, fine-grained tannins are balanced with ripe fruit, acidity and oak.
